3 Low-Carb Recipes That Don’t Feel Like a Diet

A low-carb diet can be really healthy and a great way to lose weight, feel more energetic and get better nutrients in you. Unfortunately, carbs are delicious and low-carb diets are the hardest thing ever. Make it easier with these recipes. Delicious and healthy dishes that won’t remind you that you are on a diet.


1. Spaghetti squash

There’s nothing like a good plate of pasta to get anybody in a good mood. If you miss the cheesy deliciousness, substitute it with spaghetti squash. But don’t fall for some soggy, water-logged “spaghetti” that tastes like sadness. To get perfect strands of spaghetti, you need to roast the squash first. Cut it in 1-inch rings and take out the middle part of every ring. Place the rings on a pan and roast in the oven at 400°F for about 40 minutes. If you cant, you can drizzle with olive oil first. After they are done, peel the skin from the rings and use a fork (or your hands!) to pull the rings apart and form strands. Roasting the squash like this makes it so you get longer strands that are not watery and with a better flavor. Use them in place of spaghetti for your favorite stir fry or sauce and cheese-drenched Italian recipe.

2. Portobello mushroom sandwich buns

Sandwiches are just practical. There is nothing easier to make and take with you to work or school, but they come with bread and all those unnecessary carbs. Do without them and replace regular sandwich buns by portobello mushroom caps. Toss them a bit in salt, pepper and olive oil and roast them at 425°F for 20 minutes. Fill them with your favorite meats, cheeses and veggies and enjoy a delicious sandwich without the bread. These buns are even better than the regular kind, as they are more flavorful and they will make you feel more satisfied, which will keep you from overeating.

3. Cauliflower pizza dough

Pizza is one of man’s best inventions and nothing hurts as much as giving it up in favor of a low-carb diet. The good news is that you don’t have to say goodbye to the cheesy goodness, you only have to replace the regular crust with cauliflower crust. To do this, you will need one medium head of cauliflower, ¼ cup shredded Parmesan, 1 egg, ½ teaspoon basil, ½ teaspoon oregano and ½ teaspoon garlic powder. First, remove the stems from the cauliflower and pulse in a food processor until it has the texture of rice. Microwave it in an uncovered bowl for 4-5 minutes. Allow it to cool for 5 minutes and place in a clean kitchen towel so you can squeeze all the moisture out. Combine the cauliflower with the egg, garlic, cheese, basil and oregano. Add a pinch of salt and pepper to taste. Stir until the mixture has the consistence of dough. Spread into a pizza pan and bake it in a preheated oven at 500°F for about 10-15 minutes. Now add the sauce, cheese and favorite toppings and broil for five minutes until the cheese has melted. Enjoy.
