I Scream For Homemade Ice Cream (That Needs No Ice Cream Maker)

Summer is synonym with ice cream, but it’s not exactly budget-friendly to buy a tub every day. The obvious solution is to make it yourself. And with these delicious no-churn recipes, you don’t even need an ice-cream maker.

Chocolate-Peanut Butter Ice Cream

Rich, creamy, sinfully delicious chocolate peanut butter ice cream with no ice cream maker. You will need one pint heavy cream, 14 oz condensed milk (the sweetened kind, not the “evaporated” kind), 4 oz of melted chocolate, ½ cup crunchy peanut butter and ½ cup of Reese’s Peanut Butter Cups, chopped. With the help of a stand mixer, whip the cream for about three minutes, until you get stiff peaks. In another bowl, combine the chocolate and the condensed milk. Now fold the whipped cream into the chocolate mixture until fully incorporated and fold in the Reese’s. Pour the mixture into a loaf pan and heat the peanut butter 30 seconds in the microwave, until it’s very soft and runny. Gently swirl it into the ice cream, cover the loaf pan with plastic wrap and stick it in the freezer for at least 4 hours or until firm. Enjoy with unashamed pleasure, knowing Ben and Jerry have nothing on you.

Funfetty Birthday Cake Ice Cream

For the basic no-churn ice cream mix, whip two cups of heavy cream to stiff peaks, using ether a hand mixer or a stand mixer with a whisk attachment. In another mixing bowl, mix one can (14 oz) of condensed milk and ¾ cup funfetty or yellow cake mix. Fold the whipped cream into the condensed milk mixture until perfectly combined. Then, fold half a cup of rainbow sprinkles (or any other color). Pour into a loaf pan, top with more sprinkles and wrap with cling or plastic wrap. Leave in the freezer until firm, about 4-6 hours. Serve in your next birthday party or whenever you need a touch of color in your day.

Blue Cookie Monster Ice Cream

This one is perfect for the kids. Or the adults that love cookies and blue things. You already know the drill, you need two cups of heavy cream and a 14 oz can of condensed milk for the standard no-churn ice cream mix. You will also need 1 tbsp vanilla extract, ½ tsp blue food coloring, 15 Oreo cookies (or similar) and 15 chocolate chip cookies. Break up the cookies in medium-sized chunks and set them aside. Whip the cream with the food coloring and the vanilla until you get stiff peaks. Fold in the condensed milk and beat until the color is uniform. You can add more food coloring if needed.  Pour the mix into a loaf pan and fold in the cookies. You can leave a portion of the cookies out to top off the pan as decoration. Cover with plastic wrap and freeze for 4-6 hours or until firm.
